Bouef Gras

This is a throwback to the old days when Catholics sacrificed a lot during Lent right after Mardi Gras. We had and still do give up the eating of meat on Fridays. Thus the reminder where beef comes from. Of course, in Louisiana, the lack of meat is such a sacrifice. We are forced to eat seafood which is abundant in Louisiana. (irony intended)
